Traditionally diamonds are used because the Greeks believed the sparkle was like the flame of everlasting love.  Europeans chose  it because it is the hardest of precious stones, symbolizing the unbreakable bond of marriage.  So, yes, opals are certainly more gorgeous, but not as symbolic!
